ONLINE: Cook A Book – Crispy Smashed Potatoes

Crispy Smashed Potatoes:

  • 1 pound fingerling or baby potatoes (PRE-EVENT PREP: In a medium pot, combine the potatoes, 2 TBS salt, and 4 cups water. Bring to a boil over high heat. Reduce the heat to a gentle simmer and cook for 12 minutes, or until the potatoes are cooked through but still firm. Drain and put in refrigerator to cool.)
  • Canola Oil
  • Butter
  • Grated Parmesan Cheese
  • Fresh Parsley
  • Fresh Chives or Spring Onions
  • 1 lemon
  • Black Pepper
  • Sea Salt

Horseradish Cream:

  • Sour Cream
  • Mayonnaise
  • Grated Horseradish (fresh or prepared)
  • Worcestershire Sauce
  • Tabasco sauce
  • Salt
  • Black Pepper
